Roasting veggies

Possibly overdid it.  Had to give some to family members.  Next time maybe do a tad less.

  1. If you need to do something with veggies dont roast them... pickle them! Ive got sooo many simple pickled veggies in the fridge. Go to the asian aisle in the grocery store, buy a pack of pickling spices for 99cents (you know where they have the cheap mexican bags of spices?), boil with 1 part vinegar, 1 part sugar, 1.5 parts water for a few minutes and them dump it hot straight on the cut up veggies in a tupperware. I know your kids like pickles!

    right now I have
    Cauliflower
    red onions
    cucumbers
    shitake mushrooms
    jalapenos

    all pickled and I snack on em daily =D
    Oh you dont even need the pickling spices. Add garlic for more oomph.
